Exotic Tofu Salad - We’ve given healthy and vegetarian a whole new dimension in this exotic tasting tofu salad recipe. If you like, you can add some fresh garden greens as well, or try it as a wrap, or both! A quick, easy lunch, any way you choose.

Ingredients to make Exotic Tofu Salad
1 (14 ounce) package firm tofu, drained
3 tablespoons soy sauce
1 tablespoon mirin (sweetened rice wine)
2 teaspoons sesame oil, or to taste
1 tablespoon rice vinegar
2 tablespoons vegetable oil
2 cloves garlic, minced
1 teaspoon minced fresh ginger
1 large tomato, seeded and chopped
1 small red onion, thinly sliced
1/4 cup chopped cilantro
1 tablespoon sesame seeds

4 tb Raisins
1 t Vanilla
6 tb Flour

2/3 c Powdered milk
1 Amount of brown sugar Twin to equal 20 tsp. sugar

BBQ Tandoori Style Fish - Tender, moist fish fillets, and fiery, fresh tandoori sauce combine to create character for this healthy eating meal. And nothing says bring on the flavor like the BBQ, very quick and easy as well, grilled in under 1o minutes!

Ingredients to make BBQ Tandoori Style Fish
1 1/2 cup(s) low-fat plain yogurt
2 teaspoon(s) garlic paste
2 teaspoon(s) grated fresh ginger
2 1/2 teaspoon(s) paprika
1 teaspoon(s) curry powder
1 teaspoon(s) red chili powder
1 teaspoon(s) ground cumin
1/2 teaspoon(s) salt
4 (6-ounce) 3/4-inch-thick tilapia, snapper, or mahimahi fillets
Directions to make BBQ Tandoori Style Fish
In a large bowl, whisk together yogurt, garlic paste, ginger, paprika, curry powder, chili powder, cumin, and salt. Remove 1 cup of the mixture to a bowl and reserve for serving. Place fillets in a shallow dish and brush with remaining yogurt mixture to coat completely. Cover and refrigerate 1 hour.
Heat an outdoor gas grill, or prepare coals for a charcoal grill for direct grilling over medium-high heat. Remove fillets from marinade; wipe off excess marinade. Brush the cooking grates clean and oil the grill rack. Lightly brush fillets with oil. Grill fillets (keeping the grill lid closed as much as possible) until fish is opaque and still moist, 6 to 8 minutes, carefully turning fillets once when fish releases easily from grill pan.
Serve with remaining yogurt mixture.

“Berry” Delight Dessert - Bursting with fresh, juicy berries. this delightful, healthy dessert, can actually be served for breakfast, it has so much of Natures goodness in it. Kids go crazy for this easy, frozen, dish, and have no idea it’s also a healthy snack, and don’t worry, we won’t tell them if you don’t!

Ingredients to make “Berry” Delight Dessert
1 tb Unflavored gelatin
2 tb Water, cold
1 tb Lemon juice
1 c Unsweetened frozen raspberries, pureed, OR your favorite berry)
1 t Lemon rind, or orange rind
2 tb Frozen apple juice concentrate
2 c Plain lowfat yogurt
**Vary the fruit juice and fruit puree combinations to develop your own creative desserts according to the seasons. It takes almost two cups of fruit to make one cup of puree. Bananas can be mashed with a fork; other fruits do better in a blender.
***If desired, use 1/2 teaspoon ground ginger, cinnamon or cardamom in place of lemon or orange rind. Honey may be used in place of the juice concentrate.
