Ingredients to make Homemade Gluten Free Muesli

1 1/2 cup Oats, rolled, old fashioned * 375 ml
1 cup Apple juice, milk, rice or soya milk 250 ml
4 tbsp Yogurt 125 ml
2 tbsp Flax seed 30 ml
2 tbsp Sunflower seeds 30 ml
2 tbsp Dried fruit - raisins, cranberries etc. 30 ml
2 tbsp Slivered almonds 30 ml
1 tbsp Honey or maple syrup (optional)

Directions to make Homemade Gluten Free Muesli

Step 1:

In a bowl, soak oatmeal in the liquid – fruit juice, milk or any number of milk substitutes such as soya milk or rice milk overnight in the refrigerator or for at least an hour in the refrigerator before you want to eat it.

Step 2:

Just before eating add other ingredients and mix well. Depending on how thick you like your mixture add more or less yogurt. Honey or maple syrup can be added depending on how sweet you like your cereal. Top with fresh berries, banana or fresh fruit salad.

Step 3:

Other ingredients like seeds, dried fruit, almonds are only suggestions – be creative

Ingredients to make Oatmeal Apple Raisin Cookies

4 1/2 oz (130 g) uncooked quick oats, toasted (lightly browned)
1/2 cup all-purpose flour
1/2 tsp cinnamon
1/4 tsp baking soda
1/4 tsp salt
1/4 cup light brown sugar
1/4 cup low fat spread
1 large apple cored and grated
1 egg
1/2 tsp vanilla extract
1/3 cup tsp dark raisins

Directions to make Oatmeal Apple Raisin Cookies

Step 1:Preheat oven to 180 C (350F). Spray 2 baking sheets with nonstick cannola oil spray.
Step 2:In a large bowl, mix the oats, flour, cinnamon, baking soda and salt, and set the mix aside. In another bowl, whip the brown sugar together with the low fat spread till the mixture goes light and fluffy.
Step 3:Add the grated apple, egg and vanilla extract, and beat until well blended. Add the oat mixture to the egg and apple blend, mix well, and add the raisins. With an ice cream scoop, spoon the dough and drop onto the baking sheets forming 24 equal cookies and leaving 2 inches distance between each cookie.
Step 4:Now flatten each cookie with spatula, and bake in center of middle oven rack 12-15 minutes, until the low fat apple and oat cookies go lightly browned.
