“Berry” Delight Dessert - Bursting with fresh, juicy berries. this delightful, healthy dessert, can actually be served for breakfast, it has so much of Natures goodness in it. Kids go crazy for this easy, frozen, dish, and have no idea it’s also a healthy snack, and don’t worry, we won’t tell them if you don’t!
Prep Time: 10 mins |
Ingredients to make “Berry” Delight Dessert
1 tb Unflavored gelatin
2 tb Water, cold
1 tb Lemon juice
1 c Unsweetened frozen raspberries, pureed, OR your favorite berry)
1 t Lemon rind, or orange rind
2 tb Frozen apple juice concentrate
2 c Plain lowfat yogurt
**Vary the fruit juice and fruit puree combinations to develop your own creative desserts according to the seasons. It takes almost two cups of fruit to make one cup of puree. Bananas can be mashed with a fork; other fruits do better in a blender.
***If desired, use 1/2 teaspoon ground ginger, cinnamon or cardamom in place of lemon or orange rind. Honey may be used in place of the juice concentrate.

Fruity Chicken Salad - Wow, this creamy chicken salad, is absolutely overflowing with huge chunks of healthy grilled chicken, sweet, colorful fruit, and some long grain rice! Low fat, and low cal, all the way with this one, right down to the grilled chicken, so enjoy it “guilt free”.

Ingredients to make Fruity Chicken Salad
3 oz/90 g cooked, long grain rice
1 oz/30 g pineapple in natural juice, drained, chopped
Half medium banana, sliced
15 oz/45 g black grapes, halved
2 ts Lemon juice.
1/4 oz/7 g sultanas
2 ts Desiccated coconut
1 tb Low fat natural yogurt
2 ts Low Cal mayonnaise
pnch Chili powder (optional)
2 oz/60 g cooked chicken, chopped
Salt and pepper.
Lemon slices and fresh Sprigs of parsley to garnish

Tossed Pasta with Lemon Garlic Veg - The unbelievable “no sauce” pasta recipe. We healthified this as much as we could for you, not only by cutting out the heavy sauce, but by giving it fresh, natural flavors of tomato, garlic, and basil, that were sauteed in wine. Toss everything with healthy olive oil and serve.

1 ts Olive oil
2 Garlic cloves, peel & mince
1/2 c Dry white wine
1/4 c Freshly squeezed lemon juice
1 c Chopped tomato (1 medium)

4 oz Semolina angel hair pasta
1/4 c Chopped fresh basil
2 tb Freshly grated Parmesan
