1 banana
1/2 cup silken tofu
1/2 cup soymilk
2 tablespoons unsweetened cocoa powder
1 tablespoon honey

Step 1:1.Slice banana and freeze until firm. Blend tofu, soymilk, cocoa and honey in a blender until smooth. With the motor running, add the banana slices through the hole in the lid and continue to puree until smooth.

Ingredients to make Low Fat Beefy Macaroni and Cheese

90 g (3 oz) elbow macaroni
220 g (8 oz) premium lean ground beef
1/2 cup onion, chopped
1/2 cup red capsicum (red pepper), chopped
1 cup of tomato sauce
1/4 tsp dried basil
1/4 tsp dried thyme
1/4 tsp ground black pepper
40 g (1 1/2 oz) low fat grated mozzarella cheese.

Directions to make Low Fat Beefy Macaroni and Cheese

Step 1:reheat it to 350 F (180 C). Cook the macaroni for about 10 minutes in a large pot of boiling water, and drain.
Step 2:spray a non-stick frying pan with cannola oil, and cook the beef for about 5 minutes, stiring constantly till the meat goes brown. Drain the fat (if any). Set aside on a large dish.
Step 3:Spray the non-stick pan again with cannola oil, and saute the chopped onion and capsicum over mid heat. Stir every now and then till the veggies go tender. Add the tomato sauce, thyme, black pepper and the beef, and continue stirring frequently for about 3 minutes or so. Combine the macaroni with the sauce, and then remove from the heat.
Step 4:Put the combined macaroni and beef sauce into a ovenproof baking tray and sprikle with low fat grated cheddar cheese. Bake for about 20 minutes, and remove from the oven. Let it cool down a bit, and serve warm.2

Directions to make Banana Millet Muffins

Step 1:.In a large bowl, mix together flours, baking soda, salt, and millet. Set aside.
Step 2:In blender, puree on high speed the applesauce, egg or equivilent, bananas and raisins. Add wet stuff to dry, moisten evenly.
Step 3:Spoon batter into non-stick 12 muffin tin deviding evenly and bake 40-50 minutes at 350 F or until browned.

1 tb Nonfat yogurt, plain flavor

5 Apples, peel/core/slice thin

Topping

Bring to a boil: 2 tb Oil

1/4 c Granulated sugar, OR brown sugar

1 ts Cinnamon

1 ts Natural dehydrated butter

Directions to make Low Fat Apple Topped Cake

Step 1:

Preheat the oven to 425F. Grease a 9×13 inch baking pan.

Step 2:

Sift both flours and the baking powder together in a medium sized bowl. Beat the honey, 1/2 cup brown sugar, vegetable oil, egg whites, and nonfat yogurt together. Pour this into the flour mixture and stir well. Pour the dough into the prepared pan and smooth out evenly. Lightly press the apples into the dough in straight lines. Bake for 10 minutes at 425F.

Step 3:

Remove the cake from the oven. Drizzle the topping over the top of the apples. Return the cake to the oven and bake at 375F for 15 to 20 minutes or until cake tester comes out clean.

Main Ingredient: Fruit, Fruit Juice

Ingredients to make “Berry” Delight Dessert

1 tb Unflavored gelatin
2 tb Water, cold
1 tb Lemon juice
1 c Unsweetened frozen raspberries, pureed, OR your favorite berry)
1 t Lemon rind, or orange rind
2 tb Frozen apple juice concentrate
2 c Plain lowfat yogurt

**Vary the fruit juice and fruit puree combinations to develop your own creative desserts according to the seasons. It takes almost two cups of fruit to make one cup of puree. Bananas can be mashed with a fork; other fruits do better in a blender.

***If desired, use 1/2 teaspoon ground ginger, cinnamon or cardamom in place of lemon or orange rind. Honey may be used in place of the juice concentrate.

Directions to make “Berry” Delight Dessert

Step 1:Soften gelatin in cold water for 2-3 minutes. Combine gelatin, lemon juice, fruit puree, grated rind or seasoning, fruit juice concentrate and yogurt and mix thoroughly. Freeze until crystals begin to form around the edges.
Step 2:About 30 minutes before serving, remove from freezer to refrigerator to allow dessert to soften. Scoop into stemmed dessert dishes for a festive presentation.
