Ingredients to make All In One Egg Lunch

1/4 cup butter
1 cup bread cubes
1 cup shredded carrots
1/2 teaspoon salt
1 tablespoon dried parsley
1 (5 ounce) can chunk chicken, drained and flaked
6 eggs
1/3 cup milk
1 cup shredded Cheddar cheese

Directions to make All In One Egg Lunch

Step 1:Over medium-low heat melt butter in a large saucepan. Add bread cubes and toss to coat with butter. Stir in carrots, salt, parsley and chicken. Cook for 2 minutes, stirring occasionally.
Step 2:Beat together eggs and milk; stir in cheese. Pour egg mixture over bread mixture and stir briefly to combine. Cook until eggs are set, about 10 to 15 minutes.

Ingredients to make Applesauce Cake for Diabetics

1 c Raisins
1 c Dried fruit, diced
2 c Water
2 c Flour
1 ts Baking soda
1/2 ts Salt
1/2 ts Nutmeg
1 1/2 ts Cinnamon
2 Eggs, beaten OR
Equilavent egg substitute
1 c Unsweetened applesauce
2 tb Liquid sweetener
3/4 c Vegetable oil
1 ts Vanilla extract
1/2 c Chopped nuts

Directions to make Applesauce Cake for Diabetics

Step 1:Combine raisins, fruit and water in a saucepan; cook, uncovered, until water is evaporated and fruit is soft. Set aside to cool.
Step 2:Meanwhile, in a large mixing bowl, combine flour, baking soda, salt, nutmeg and cinnamon. In another bowl, combine eggs, applesauce, sweetener, oil and vanilla. Add nuts and reserved fruit mixture. Stir into dry ingredients and blend thoroughly.
Step 3:Pour into a greased 10\” fluted tube pan (Bundt). Bake at 350 degrees F for 35 - 40 minutes or until the cake tests done.

Ingredients to make Turkey Meatloaf

1 table spoon olive oil
2 stalks celery, finely chopped
1 small onion, finely chopped
1 clove garlic, crushed with press
2 pounds lean ground turkey
3/4 cups fresh whole wheat bread crumbs
1/3 cup fat-free milk
1 tablespoon Worcestershire sauce
2 large egg whites
1/2 cup ketchup
1/2 teaspoon salt
1/4 teaspoon coarsely ground black pepper
1 tablespoon mustard

Directions to make Turkey Meatloaf

Step 1:Preheat oven to 350 degrees F. Add oil in the 12-inch nonstick skillet, and cook celery and onion on medium flame for 10 minutes until the vegetables are tender. Stir occasionally. Add garlic and cook for another 1 minute. Transfer the vegetables into a large bowl and let them cool slightly.
Step 2:Add turkey, bread crumbs, milk, Worcestershire sauce, egg whites, ketchup, salt, and black pepper to the vegetables. Mix the ingredients with hands until well combined.
Step 3:Mix mustard and the remaining ketchup in a cup. In a baking pan, shape the meat mixture into 9 x 5 loaf. Spread the ketchup mixture over top of the loaf.
Step 4:Bake the meatloaf for 55 to 60 minutes. Let meatloaf stand for 10 minutes in the oven to set juices for easier slicing. Transfer the meatloaf to plate and cut into slices.

We also blended in some soy flour with the whole wheat, making this quick, easy recipe as healthy as we could!

Ingredients to make Banana Millet Muffins

2 c Whole wheat flour
1/4 c + 1T soy flour
2 t Baking soda
1/2 t Salt
1/3 c Millet
1/2 c Applesauce
2 lg Egg equivilent
2 c Mashed over-ripe bananas
1/4 c Golden raisins

Directions to make Banana Millet Muffins

Step 1:.In a large bowl, mix together flours, baking soda, salt, and millet. Set aside.
Step 2:In blender, puree on high speed the applesauce, egg or equivilent, bananas and raisins. Add wet stuff to dry, moisten evenly.
Step 3:Spoon batter into non-stick 12 muffin tin deviding evenly and bake 40-50 minutes at 350 F or until browned.

6 tb Flour
1 t Baking Powder
2/3 c Powdered milk
1 Amount of brown sugar Twin to equal 20 tsp. sugar

Directions to make No Fat Carrot Muffins

Step 1:Mix all ingredients. Spray muffin tin with Pam. Divide equally. Bake at 350 F. for 25 minutes. Makes 12 muffins.
Step 2:Can substitute Egg Beaters for the eggs and use Equal instead of Sweet and Low.
